The role:
You will work directly with our Lead Food Scientist and our fermentation team to support the development and optimization of our alternative protein products. You will be involved in research, development, experimentation, and sensory evaluations to ensure the highest quality and scalability of our products. This role offers hands-on experience in a dynamic, fast-paced environment with the opportunity to take ownership of your projects while growing and learning alongside the team.
Your main tasks:
- Assist in developing new formulations for alternative protein products by conducting experiments and collecting data to improve flavor, texture, and stability
- Perform sensory, physicochemical, and textural analyses to evaluate product performance and monitor quality during shelf-life and scale-up
- Analyse experimental data and prepare concise reports for the scientific team
- Work with R&D, manufacturing, and operations teams to ensure product development goals are met
- Maintain lab equipment and supplies, ensuring the lab is prepared for experiments
What you need to succeed in this role:
Required skills and experience:
- A passion for our core mission
- PhD or equivalent, and/or M.Sc. in Food Science, Food Technology, Biochemistry, Gastronomic Sciences or a related field
- Previous experience in new food product development of alternative proteins, particularly in fungi or fermentation-based meat alternatives, is a big plus
- Ability to design and execute scientific experiments
- Familiarity with food texture and sensorial analysis, with the ability to conduct and analyse sensory evaluations
- Proven ability to interpret scientific data with a high attention to detail and the ability to solve technical problems in a lab setting
- Excellent communication skills in English (German is not required, but is a plus)
- Good knowledge of MS Office such as Excel
Additional skills/qualities that will be useful/ preferred:
- Hands-on and proactive mindset, with strong problem-solving skills
- Flexibility to work as part of a dynamic team
- Knowledge of flavour chemistry or reaction flavour development.
- Previous experience working with a texturometer
- Knowledge and experience in high-end professional kitchens as a chef
