We are hiring a Head of Commercial to lead and establish our commercial function.

You will take full ownership of the commercial strategy, from defining target segments and pricing approach to securing binding supply agreements and establishing disciplined forecasting.

This is a hands-on position. You will personally lead outreach, negotiations, contract structuring, and account conversion. There is no commercial team in place. You are expected to build a predictable revenue engine.

You are accountable for signed contracts, realised revenue, and commercial discipline.

Pacifico Biolabs develops scalable mycelium-based meat as an ingredient for B2B customers. Our focus is delivering cost-competitive, clean-label protein solutions to manufacturers, private label partners, and foodservice operators.


We are scaling from Demo to Commercial operations and are backed by some of Europe’s leading FoodTech and ClimateTech VC investors. We’re based in Berlin and Leipzig.

Your main tasks:


Revenue generation

  • Define and prioritise target customer segments
  • Build and manage the full B2B sales pipeline
  • Convert pilots into recurring, multi-year supply agreements
  • Negotiate directly with procurement teams and senior buyers


Pricing and contract structuring

  • Develop and refine pricing strategy by segment
  • Structure volume tiers, MOQs, ramp agreements, and payment terms
  • Draft and negotiate supply agreements
  • Maintain margin discipline while driving volume


Commercial discipline and alignment

  • Own CRM management and revenue forecasting
  • Establish clear pipeline metrics and reporting
  • Align customer commitments with production and operational capacity
  • Translate customer requirements into clear internal priorities


What you need to succeed:


  • 5+ years in B2B food, protein, or ingredient sales
  • Proven track record of building revenue from an early stage
  • Experience closing recurring supply agreements with food manufacturers or retailers
  • Strong understanding of pricing architecture, margin structures, and forecasting
  • Experience negotiating with procurement teams in German


Experience in alternative protein, meat, or ingredient supply is advantageous.
